2 tablespoons Marie Sharp’s Pineapple Jam
- 2 tablespoons olive oil
- 1 ½ tablespoon fresh lemon juice
- ½ teaspoon honey
- ½ teaspoon Dijon mustard
- Kosher salt and pepper
- 2 bulbs fennel, cored and thinly sliced
- 3 ribs celery, thinly sliced on bias
- ¼ cup celery leaves
- 2 tablespoons capers, rinsed and chopped
- 2 ounces Parmesan cheese, shaved
