Ingredients

Shrimp Seasoning

1 pound 21/25 P&D tail off shrimp
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
½ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon ground black pepper

Dressing

½ cup Greek yogurt, divided
⅓ cup olive oil
2 tablespoons fresh lime juice
1 tablespoon Marie Sharp’s Beware Habanero Pepper Sauce
1 cup fresh cilantro, chopped
1 clove garlic, minced
1 teaspoon honey
½ teaspoon dried oregano
½ teaspoon salt

Salad

1 head romaine lettuce, chopped (about 6-7 cups)
1 cup grape tomatoes, halved
½ cup red cabbage, diced
1 medium ripe avocado, sliced
1 cup corn kernels (canned steam fresh)
1 cup tortilla chips, crushed
½ cup creamy cilantro lime dressing
lime wedges for garnish

Directions

In a medium bowl, add shrimp, olive oil, cumin, chili powder, paprika, garlic powder, oregano, salt and pepper. Toss well to coat and set aside to marinate for 15 minutes.
Sauté shrimp over medium-high heat for 5 minutes until shrimp turns pink and nicely browned.
For the dressing, combine all ingredients in a food processor and blend until well combined.
In a large serving bowl, add all salad ingredients including lettuce, tomatoes, red cabbage, avocado, corn, tortillas, and cooked shrimp.
Drizzle your desired amount of the cilantro lime dressing on top and toss to combine. The remainder of dressing can be refrigerated for up to a week. Enjoy.
