Marie's original recipes started with fresh carrot. One day, the Citrus Company of Belize approached Ms. Marie and asked her if she could use their waste product from citrus juice production, the pulp. Marie set out to up cycle this nutritious waste product and turn it into a delicious sauce. This is the culmination of her efforts, which also led Marie to explore other exotic ingredients, such as Nopal and Moringa.
