Marie spent years perfecting her recipe, selectively breeding out her juicy Belizean red habanero varietal. Marie's husband managed the Citrus Company of Belize. Together they tilled and toiled their property located at #1 Melinda Road, on the Melinda Estate, adjacent to the Melinda Forest Reserve, and they named the pepper sauce "Melinda's", after the farm.
